Dear Friends,

What a difficult, challenging week! It's hard to believe that Passover is less than 3 weeks away. How do you prep for a holiday meal under these strange circumstances? On our end we're keeping things simple and making things ahead (I have never appreciated my deep freezer more!). 

This week I'm sharing some easy Passover recipes that use just a few ingredients, as well as a handy guide to freezing food.

PASSOVER CHOCOLATE CHIP COOKIES  - These Passover Chocolate Chip Cookies are now a "holiday classic," made with love every year. It's such a simple recipe, but somehow magical. RECIPE HERE or PIN IT for later.
POTATO CRUSTED SPINACH FRITTATA - Seder brinner, anyone? Eggs have been one of the easier items for us to find at the grocery store lately. This simple recipe is easily adaptable with various cheeses and greens. The potato crust makes it extra special. RECIPE HERE or PIN IT for later.
CHOPPED LIVER - Rich, savory chopped liver is a traditional Jewish dish that brings back fond food memories for many families. MEDITERRANEAN OLIVE CHICKEN - Brisket may be harder to come by this year. This easy and delicious recipe would make a fine centerpiece for a scaled-down Seder. RECIPE HERE or PIN IT for later.
SEPHARDIC CHAROSET TRUFFLES - One of the more interesting ways charoset is served in the Middle East is in a ball or truffle form. Moroccan Seders will often serve these rather than a spreadable charoset. These candy-like charoset truffles can be enjoyed for Passover and year-round. RECIPE HERE or PIN IT for later.
FREEZING PREPARED FOODS: CAN THIS BE FROZEN? - I put this guide together a few years ago because I'm often asked about whether or not something can be frozen. Since many of us are depending on pantry and freezer items right now, I thought it would be useful to share! GUIDE HERE or PIN IT for later.
