Dear Friends,

I'm sharing some of my favorite dairy dishes this week in honor of Shavuot, which starts the evening of May 28. Whether or not you celebrate the Jewish holidays, you'll find a wealth of cheesy, creamy goodness below. Need more ideas? Check out my Shavuot Recipe Category.

PINEAPPLE RAISIN NOODLE KUGEL - I encourage you to use this recipe as more of a guide or technique. It can easily be adjusted to your tastes. Add a different variety of dried fruit to the noodle mixture, change the topping, or whatever you fancy. The only limit is your imagination! RECIPE HERE or PIN IT for later.
BAKED EGGPLANT SANDWICHES - This recipe can be served as an appetizer, a side, or even an entree. They're great on their own with just a sprinkle of fresh parsley. Topping them with a bit of marinara or arrabiata sauce makes them more entree-like. GREEK YOGURT MACARONI AND CHEESE - This lighter macaroni and cheese recipe combines sharp cheddar and Greek yogurt to create a lighter yet very flavorful cheddar sauce. While it's not exactly health food, it is much healthier than a full-fat macaroni and cheese recipe. This version is healthier, easier on the stomach and oh-so-tasty. EASY BLENDER LEMON CURD - I've found that lemon curd, though simple in terms of ingredients, can be quite finicky and difficult to master. This version uses a blender to thoroughly combine and emulsify all of the ingredients before heat is introduced, which produces smoother and quicker results. I like to use lemon curd as a dessert topping or filling for cookies and pastries. It's also great on pancakes or crepes. RECIPE HERE or PIN IT for later. 
SKILLET SEARED GREEN BEANS WITH LEMON AND COTIJA CHEESE - In this super easy and flavorful side dish, green beans are quickly seared in a hot skillet. Adding fresh lemon juice and salty cotija cheese brings these humble vegetables to the next level. RECIPE HERE or PIN IT for later. 
NEW YORK CHEESECAKE - Cheesecake is the ultimate Shavuot dessert. This recipe creates a classic New York-style cheesecake, a great base to which you can add your own special embellishments.  Or, if you're a cheesecake purist, serve it as-is… it should impress any true cheesecake aficionado. RECIPE AND HISTORY HERE or PIN IT for later.
