Dear Friends,

For my Jewish readers, Passover begins at sundown on Wednesday. Our gatherings (and menus) may look a little different this year, for obvious reasons. I certainly didn't anticipate spending our 10 month old baby's first Seder this way. But you know what? It's ok! We're choosing to focus on gratitude and all the blessings around us. The simple act of celebrating, telling the story, and keeping the tradition alive, is what it's all about. 

I've put together a variety of choices for the holiday below. In certain parts of the country pantry items are scarce, and meat can be tough to find. While I can't anticipate everybody's specific needs, you'll find a wealth of cooking ideas in my
Passover Category, which includes lots of tasty options (broken down by dietary preference) and fun family crafts to keep the kiddos entertained. If your tradition is normally Ashkenazi but food options are limited in your local market, you might consider trying out a Sephardic Seder this year, which will open up your options by including legumes and rice. No matter what you end up making or how you end up celebrating, may your holiday be meaningful and true!

SPINACH FETA AND ARTICHOKE MATZO MINA  - I've made many variations on the matzo mina over the years. The spinach, feta and dill filling in this version reminds me of spanakopita, which contains some of my favorite Mediterranean flavors. This would make a smashing vegetarian entree or dairy side at the Passover Seder meal. DARK CHOCOLATE PISTACHIO MACAROONS -  These are my family's favorite macaroons. I add rosewater to the mix, then dip them in dark chocolate and sprinkle them with sea salt flakes. You can omit the rosewater if it's tough to locate. RECIPE HERE or PIN IT for later. Having trouble finding the ingredients? SAFFRON RICE - I love serving saffron rice as a holiday side dish. This popular recipe - with a snazzy new cooking video - would make a great addition to a Sephardic Passover Seder. HOW TO COOK BRISKET - If you're lucky enough to score a brisket, this post will walk you through everything you need to know to cook it! Includes several recipe ideas. POST HERE or PIN IT for later.
OVEN ROASTED ROOT VEGETABLES -  I've found fresh produce easier to come by lately, in large part because people in my area have been stocking pantry items. This recipe has been a favorite on the site for years, and would make a lovely addition to a scaled down Seder menu. RECIPE HERE or PIN IT for later.
HOW TO SEAR SALMON - If you haven't tried this simple method for searing salmon, you must! It's so easy and produces restaurant-quality results. Fish has been easier for us to find in our local markets. PASSOVER POTATO KUGEL - This Passover Potato Kugel is everything a kugel should be… crispy on the outside while soft, fluffy and tender inside. It's like one enormous latke, an irresistible addition to any Seder table. RECIPE HERE or PIN IT for later.
PASSOVER APPLE PECAN PIE - Treat your friends and family to pie on Passover! This Pesach-approved "pie" is made with chopped apples, sugar, matzo crackers, spices and chopped pecans. RECIPE HERE or PIN IT for later.
