Hope you're having a great February! This week, in honor of Mardi Gras, I've included a historical recipe for King Cake from my friend Gil Marks. We're also about 2 weeks away from the Jewish holiday of Purim. Below you'll find some classic Purim recipes, as well as a few vegetarian recipe ideas in honor of Queen Esther.

HUMMUS BAKED VEGAN MOUSSAKA - For a special occasion, like Purim, this is the ultimate hearty meatless entree.
