Spinach, Feta & Artichoke Matzo Mina: This Greek-style Sephardic matzo pie is a fantastic, flavorful vegetarian entrée for your Passover Seder. The savory filling of sautéed artichokes, spinach, feta, and dill reminds me of spanakopita, bringing some of my absolute favorite Mediterranean flavors right to the holiday table.

Floater Matzo Balls: When it comes to Passover, people tend to love one of two matzo ball textures—floaters or sinkers. If you are on team "floater," this recipe will teach you how to cook the lightest, fluffiest matzo balls ever! (Need a delicious broth to serve them in? Check out my classic matzo ball soup recipe, too!)

Holiday Brisket: A savory, aromatic, slowly cooked brisket is a Seder classic. This Kosher for Passover recipe simmers the meat with tomatoes, onions, garlic, brown sugar, and a touch of vinegar. The resulting sauce is incredibly rich and flavorful, and the slow-cooked vegetables melt in your mouth like butter.

Dark Chocolate Dipped Macaroons: To add a bit of decadence to the standard coconut macaroon, I've dipped and drizzled these in dark chocolate. The combination of rich chocolate and sweet, chewy macaroon is completely impossible to resist.

I hope these recipes help you get a delicious head start on your holiday planning.

I'd love to know—where do you stand on the great matzo ball debate? Are you "Team Floater" or "Team Sinker"? Let me know on Instagram.

With warmth and gratitude,
Tori
