Spring is officially here, and with it comes a beautiful season filled with holidays, gatherings, and celebrations of all kinds. No matter what you and your family are observing this time of year, a festive meal is the perfect way to welcome the warmer weather.


​Crunchy Pickled Salad​: If you love dill pickles, this is the salad for you! Seven simple ingredients combine to create a mouthwatering, pickle-flavored bowl of goodness. With cucumbers, cabbage, radish, and fresh dill, it delivers a cold, fresh crunch that perfectly complements a variety of heavy holiday main dishes. It is completely pareve and naturally refreshing.


​Bubaleh​: Have you ever tried a Passover pancake? This easy Bubaleh recipe requires only 4 ingredients and is so incredibly yummy. It is a fantastic breakfast or sweet treat for any spring morning. You can top it with maple syrup just like a traditional pancake, or get creative with sweet jam and fresh strawberry toppings!


​Lightened Up Egg Salad​: This is a healthy, lightened-up take on classic egg salad, offering all the creamy consistency you know and love with an extra boost of protein. It is perfect for a spring picnic or an easy meal-prep lunch. I love adding fresh dill and diced dill pickles to the mix to give it that perfect hit of saltiness and crunch.

It is topped with a simple, creamy fresh dill and horseradish sauce that tastes so good. It is healthy, gluten-free, and Kosher for Passover (just double-check that your pre-packaged ingredients, like horseradish, are certified if you keep kosher!).


​Lemon Swirled Honey Cheesecake​: Irvin Lin of Eat the Love shared this simple, incredibly tasty Kosher for Passover lemon cheesecake with me, and it is a guaranteed crowd-pleaser for any spring celebration. The crust is uniquely made with shelled pistachio nuts and matzo meal, creating a gorgeous base for the sweet and tart lemon filling. It is so good you will want to make it year-round.
