We are eating vegetarian most of the time, but lately I've been trying to up my protein intake for health reasons. These chicken recipes are a great, easy way to integrate protein into our weeknight menu rotation.
That's why I put together a few of my favorite chicken recipes that are a little more fun, a little more flavorful, and definitely not your typical weeknight dinner. These are the ones I reach for when I want something easy but still want everyone at the table to actually be excited about it.
