Happy Labor Day! Summer is winding down, which means back-to-school season is upon us. This is my first year as a preschool mom, which means I've become laser-focused on planning meals ahead and keeping things as simple as possible.

Below are a few easy recipes to help you get the school year started right. They're healthy, delicious, and don't take a lot of time to prepare. 

QUINOA PORRIDGE WITH MAPLE AND BROWN SUGAR - This simple and versatile breakfast recipe is a great way to start the school day. It can be made to suit a number of different dietary restrictions, and gets an added boost of protein from quinoa.  RECIPE HERE or  PIN IT  for later.

SUNFLOWER BUTTER -  Nut allergy awareness is on the rise. Even trace amounts of nuts can trigger a dangerous nut allergy. Because of this, many schools (particularly preschools) don't allow peanut products of any kind in school lunches. MEDITERRANEAN TUNA SALAD - Busy moms and dads need lunch, too! This quick and healthy recipe for tuna salad ditches mayonnaise in favor of olive oil, lemon, and aromatic basil. Season the mixture generously with salt and pepper, and you've got a fresh tuna salad with a twist. EASY CHICKEN CACCIATORE - When I was growing up, my mom had a weekly rotation of recipes on hand that were fast, easy, and reliable. QUINOA BLACK BEAN BURRITO BOWLSThese quick dinner bowls make a deliciously simple weeknight dinner. I've opted for cilantro lime quinoa rather than rice to add flavor, protein and nutrients. Black beans are simmered with onions, garlic, and spices for added flavor. I have listed several optional toppings, so you can make this bowl all your own.
