Spring Inspired Brunch Recipes 🥐
Sunday, May 2, 2021
Hi Friend,
There's something about this time of year that makes me crave brunch. The warming weather calls for sitting down and enjoying a not-quite-breakfast, not-quite-lunch meal. Even better if you can enjoy it outside! Below I've shared some of my favorite spring-inspired brunch recipes. They also work really well for Mother's Day, which is just around the corner.

You can eat these without the cheese filling (if you cook them on both sides); they are pretty tasty on their own, though I prefer them stuffed with cheese and topped with homemade strawberry topping or homemade lemon curd (you can find that recipe below). RECIPE HERE or PIN IT for later. | | | |
EASY BLENDER LEMON CURD - This lemon curd uses a blender to thoroughly combine and emulsify all of the ingredients before heat is introduced, which produces smoother and quicker results. It's completely addictive. RECIPE HERE or PIN IT for later.
