There's something about this time of year that makes me crave brunch. The warming weather calls for sitting down and enjoying a not-quite-breakfast, not-quite-lunch meal. Even better if you can enjoy it outside! Below I've shared some of my favorite spring-inspired brunch recipes. They also work really well for Mother's Day, which is just around the corner.

NOVA LOX BENEDICT - Quality smoked Nova lox (or smoked salmon) are incredibly delicious. Layer them on a toasted English muffin, then top them with a poached egg and lemony hollandaise sauce, and you've got one incredible brunch entree. RECIPE HERE or   PIN IT  for later.

CHEESE BLINTZES - My blintz recipe includes vanilla in both the blintz and the filling, which provides a delectable flavor and aroma. You can eat these without the cheese filling (if you cook them on both sides); they are pretty tasty on their own, though I prefer them stuffed with cheese and topped with homemade strawberry topping or homemade lemon curd (you can find that recipe below). RECIPE HERE or PIN IT for later.

HUEVOS SHAKSHUKOS - Two tasty egg dishes from two different parts of the world unite to make one tasty spiced-up brunch dish. RECIPE HERE or  PIN IT for later.

RHUBARB ROSEWATER MARGARITA - A refreshing margarita with spring rhubarb syrup and just a hint of an exotic floral finish. Enjoy for Cinco de Mayo, Mother's Day, or to celebrate spring. RECIPE HERE or PIN IT for later.

EASY BLENDER LEMON CURD - This lemon curd uses a blender to thoroughly combine and emulsify all of the ingredients before heat is introduced, which produces smoother and quicker results. It's completely addictive. RECIPE HERE or PIN IT for later.

PISTACHIO ROSE BLONDIES WITH WHITE CHOCOLATE - These tender, cookie-like blondies are rich, exotic, and completely irresistible. Top a warm blondie with a scoop of vanilla ice cream if you're feeling totally decadent. RECIPE HERE or PIN IT for later.
