This summer is shaping up to be a hot one! Sometimes it's hard to find motivation to cook when the heat takes so much of our energy. Below you'll find a selection of simple, summery recipes that are light enough to enjoy after a day in the sun.
MEDITERRANEAN SARDINE PASTA WITH LEMON, CAPERS, AND CHILI FLAKES - In this healthy recipe, sardines, fresh lemon juice, capers, chili flakes, and olive oil combine to create a flavorful pasta dish. Most of the ingredients are probably already in your pantry or fridge! The result is a light yet filling, nourishing entree. RECIPE AND VIDEO HERE or PIN IT for later.
CAPONATA-STYLE GREEN BEANS - Green beans can be somewhat boring, unless you know just how to dress them up. Here I've pan-seared young, thin green beans until just tender, then topped them with a simple, Italian-inspired caponata sauce. YIAOURTI ME MELI - This Greek dish is called Yiaourti Me Meli - Greek yogurt, honey, and nuts. Cool, creamy, tangy, and sweet, with a hint of spice… so many adjectives for four simple ingredients! EGGPLANT TAHINI BASIL CROSTINI - A while back I decided to take a departure from my usual baba ganoush recipe. I added extra tahini, fresh basil from our patio garden, and lemon juice to brighten things up. I had a sourdough baguette on hand, so I grilled up some slices and served the eggplant dip on top. The result was, as my husband called it, "sinful!" RECIPE HERE or PIN IT for later.
CUCUMBER GINGER MARTINI - A breezy mix of muddled cucumber, ginger agave syrup, basil, lime, gin and vermouth, this martini is a light and refreshing take on a classic gin cocktail. RECIPE HERE or PIN IT for later.
