Dear Friends,

Summer has officially arrived, and along with it lots of bright, colorful produce. Stone fruit, cherries, herbs, berries... it's all so luscious. Lately I've been inspired by Audrey Hepburn, who said "It isn't very interesting to eat a plate full of white, therefore it can't be very good for you either." Below I've shared a few of my favorite colorful recipes that you can enjoy all season long.
APRICOT SPINACH SALAD WITH AVOCADO BASIL DRESSING - As a flexitarian (somebody who doesn't eat meat all that often), I've always appreciated that spinach is a nutritional powerhouse and a vegetarian source of iron. This Apricot Spinach Salad is fresh and unique. The creamy vegan basil dressing is a perfect compliment to the sweet apricot slices, and avocado provides a dose of healthy fat. ITALIAN VEGETABLE QUINOA BOWLS - Using fresh, ripe vegetables is key to this recipe. While the ingredients may seem simple, using fresh garlic, ripe summer tomatoes, zucchini, and fresh basil really makes the flavors pop. SPIKED LIMONANA - The taste of limonana immediately takes me back to the Mediterranean coast of Israel – it's like a mini vacation. We've enjoyed limonana for years without alcohol. ROASTED PEPPER SALAD - A super simple way to prepare and serve roasted bell peppers. Now this is a colorful recipe! Isn't it pretty? It's best served on a piece of crusty bread, or as a side dish for grilled chicken or fish. RECIPE HERE or PIN IT for later.
DROP BISCUIT COBBLER - For this cobbler, feel free to use whatever fruit is fresh and in season. Peaches and blueberries, apples, pears, mixed berries, strawberries, cherries, plums, nectarines, cranberries, or apricots - the sky's the limit. PISTACHIO MINT PESTO - This fresh pesto can be used to marinate vegetables or fish, added to salads, or as a topping for bruschetta. With the arrival of summer, pesto is a terrific sauce to have on hand– it can enhance the flavor of many grilled dishes. I especially love it served as a creamy, dreamy pasta sauce.
