Dear Friends,

It has been a difficult week on so many levels. On both Facebook and Instagram, I shared some of my thoughts on the situation America is facing right now. Almost three years ago, I wrote a blog about the larger issues facing our country. Sadly, maddeningly, we're still deep in this vicious and violent cycle of hatred. 

To my friends and family of color, who are hurting so badly right now-- please know that I am your ally. I am listening. I hear you and I empathize with you. I am raising my daughter to make this world a better place. My focus is on the future.

In times of darkness, we must do what we can to spread light... and for me, the energy of healing starts in the kitchen. I will do my best to continue spreading that positive energy, even as my heart is breaking for our nation. Below you'll find a few of my favorite seasonal berry recipes, as well as some lighter Mediterranean-style dishes for the summer days ahead. 

SALMON WITH STRAWBERRIES, BALSAMIC, & BASIL - Here I've combined crispy pan-seared salmon with a strawberry balsamic relish and a fresh basil garnish. This uncommon pairing of ingredients results in a symphony of bright flavors. It's a quick, easy, and unexpected entrée for spring. RECIPE HERE or PIN IT for later.
ANNE OF GREEN GABLES RASPBERRY CORDIAL - The novel "Anne of Green Gables" truly helped to shape the person I am today. In recent months, I find myself coming back to this classic again and again - it brings me comfort. Of all the food scenes in the Anne series, the raspberry cordial scene may be the most memorable. GREEK SALAD QUINOA BOWLS - Lemon dill quinoa and chickpeas make a protein-filled base for fresh, flavorful toppings… crunchy cold lettuce and cucumbers, sweet ripe tomatoes, briny kalamata olives and creamy, salty feta. LEMON BASIL GRILLED CHICKEN BREASTS - A bright and flavorful chicken marinade with a Mediterranean essence that heralds warmer months ahead. RECIPE HERE or PIN IT for later.
STRAWBERRY SHORTCAKE - This classic is among the most beloved and enduring of American desserts, especially during the warmer months. Shortcake proves the ideal base - firm enough to stand up to the juicy berries and damp cream, while absorbing just enough flavor without becoming soggy. ROASTED EGGPLANT YOGURT DIP - A welcome twist on traditional baba ghanoush. Also known as moutabal, this delectable dip has Greek yogurt or labneh added for creaminess and tang. The roasted garlic, tahini, and fresh mint garnish take it to another level. Can't find pomegranate seeds for garnish at this time of year? HOMEMADE STRAWBERRY SYRUP - A short, sweet little recipe for warm weather. Try adding it to lemonade to make strawberry lemonade or seltzer to make a strawberry spritzer. It makes a lovely addition to cocktails, like my Strawberry Basil Martini, and mocktails. Drizzle it on pancakes as an alternative to maple syrup.
