Dear Friends,

The kitchen might seem like a daunting place, with many of us on a new cooking budget and meat shortages potentially on the horizon. Luckily, you don't need meat to make a satisfying meal. I actually cook meatless most of the time! These vegetarian recipes will satisfy the stomach as well as the pocketbook. Looking for more economical recipes? AUDREY HEPBURN'S FAVORITE SPAGHETTI AL POMODORO - May 4 is Audrey Hepburn's birthday. In her honor, I whipped up a recipe for her favorite Italian dish–spaghetti al pomodoro– which she ate at least once a week. MOROCCAN-STYLE VEGETABLE COUSCOUS - A savory and slightly sweet vegetarian entree with a hint of spice. Dried fruits, cinnamon, and spices simmer together with vegetables and savory chickpeas. It's a feast for the senses, no meat required. RECIPE AND VIDEO HERE or PIN IT for later. 
LEMON LENTIL PARSLEY SALAD  -  Lentils have been around since pre-Biblical times; they're often used as a popular protein substitute when meat is more difficult to come by. This recipe is my own version of a salad I enjoy at a local smoothie cafe - super simple, but surprisingly filling! MNAZALEH - I learned this simple and flavorful recipe for mnazaleh, a vegan eggplant and chickpea stew, in the kitchen of a Druze family in Israel. Pronounced min-ah-zah-lay, this dish is a healthy meatless entree that can be enjoyed alone or served with bread for dipping. RECIPE AND VIDEO HERE or PIN IT for later.
HOW TO SOAK, COOK, AND FREEZE DRIED BLACK BEANS - The process of soaking, cooking, and storing beans is easy, economical, and healthy – you can control the salt content in your beans, rid them of enzymes that impede digestion, and avoid the BPA lining that can leech into canned goods. QUINOA BLACK BEAN BURRITO BOWLS - These Quinoa Black Bean Burrito Bowls are like a deconstructed burrito. I've replaced rice with cilantro lime quinoa to add protein and nutrients.
