Dear Friends,

Anybody else missing deli food right now? Over the years I've re-created a lot of our favorite deli-style recipes at home. Many have been recently updated with new video content. If you're also missing your local deli, I hope some of these recipes help to satisfy your cravings while we continue to stay safe at home.
 

HOMEMADE PASTRAMI - It's glorious, that first bite of a warm pastrami sandwich on freshly baked rye. If you've ever eaten pastrami at a great Jewish deli, you know what I'm talking about. Trouble is, most of us don't have access to a deli right now. What can you do? Make it at home! RECIPE AND VIDEO HERE or PIN IT for later. 
MUSHROOM BARLEY SOUP  - A deli classic! This robust, filling soup makes a hearty lunch or dinner. Despite being "comfort food," it is surprisingly healthy. Barley is rich in dietary fiber and selenium. The grain also contains beta glucan, a complex sugar that can help to lower cholesterol. RECIPE AND VIDEO HERE or PIN IT for later. 
CHEESE BLINTZES -  Continuing with our deli theme, here is another favorite–the blintz. A blintz is a thin crepe-like pancake filled with cheese. They're pretty easy to make, and they're one of the most delicious things EVER (in my humble opinion). STRAWBERRY TOPPING - And since we have some extra time these days, why not make homemade strawberry topping for your homemade blintzes? It's also great on cheesecake, pancakes– basically anything that needs a sweet and juicy berry topping. STUFFED CABBAGE LEAVES - Stuffed cabbage leaves, also known as holishkes or prokes, may just be the ultimate comfort food. A slowly cooked, savory dish, stuffed cabbage is a classic and many families seem to have their own way of making it. RECIPE AND VIDEO HERE or PIN IT for later. WHITEFISH SALAD - Whitefish salad makes a great appetizer spread– serve it atop rye crackers or pumpernickel bread for a dainty treat. Or, make a meal out of it and create a bagel sandwich layered with cream cheese, lox, thinly sliced onion and whitefish on top. QUICK PICKLES - A super easy method for quickly producing tasty pickles. The prep only takes about 10 minutes. They aren't true deli-style kosher dills due to the small amount of vinegar used in the brine, but they are quite delicious, and they pickle much faster than the old fashioned kind. RECIPE HERE or PIN IT for later.
